Flourless Pumpkin Banana Muffins

As Summer fades and the cooler weather settles in, we reach for comfort foods that warm the soul. I set out on a mission to find locally sourced organic produce, meat, and fish to create these delicious recipes. I was inspired by local roadside bbq pit masters to new local biodynamically grown produce. I am a fan of all seasons; my favorite is Summer due to the abundance of fresh produce. Not many realize that Fall produce is terrific and provides shelf-stable items that, once canned, can last for years.

First up, the obligatory fan favorite pumpkin! Pumpkin is a versatile food prepared as a savory or sweet dish. Pumpkin-spiced everything can be rather exhausting and funny as so many poke fun at folks who are "pumpkin" freaks as they anticipate Fall at the beginning of August. I love to bake/cook with whole organic baking pumpkins. They come in two specific varieties, sugar pumpkin and the Long Island cheese pumpkin (which looks like a wheel of cheese, color varies). These can be found locally in NJ at most organic farm stands.

Pumpkin Banana Protein Muffin

Flourless Pumpkin Banana Protein Muffin Recipe:

These muffins are a fantastic addition to keep you full and free of sugar and unnecessary carbs. There are no added sugars or flour.

Ingredients:

One mashed banana

1 cup of pumpkin mash

Two eggs

1/2 cup of monk fruit (no sugar) chocolate chips

3 Tablespoons Allulose https://amzn.to/3C4iXLh

1/2 teaspoon Bob's Red Mills Baking Soda https://amzn.to/3DRb1y3

*Pumpkin spice or Cinnamon can be added

Instructions:

Pre-heat oven to 325

Mash banana with allulose, and add pumpkin and eggs. Mix well by hand.

Add cashew butter, chocolate chips, and baking soda. Continue to mix.

Bake for 15 min until golden brown
